Many of the local items – like Mahi-Mahi, Snapper, and Grouper – are caught and served the very same day! But if you really want to dive into the flavors of Aruba, we suggest ordering the Keshi Yena. “Keshi” means cheese and you get a whole lot of it with this dish. It is a large ball of cheese-filled with spice meat, either steamed or baked and, since it is inspired by the Dutch, normally covered with Gouda.
